I found this recipe on the blog Shoot to Cook via my new favorite thing to do when I am bored, Pintrest. It looked too good not to try. I am pretty much obsessed with breakfast restaurants and eggs in general, but this is something I had not tried before. Plus, the best part is you can mix and match ingredients to fix what you like and what is in your kitchen!
Eggs, prosciutto, cherry tomatoes, sauteed spinach, goat cheese, onion, garlic, cream
Preheat the oven to 350 degrees. Separate egg whites from yolk and place yolk on the side for later. Mix 1-2 tablespoons cream with egg whites (per egg you use). Saute spinach, cherry tomatoes, onions and garlic in a pan with olive oil until they are at your desired consistency. Grease the bottom and sides of a ramekin. Place prosciutto on the bottom, then layer with goat cheese, spinach, tomatoes and onions. Pour cream and egg white mixture over ingredients and then top with yolks. Place in the oven and cook for 20 min and it’s ready to eat!
The recipe can be used with any sauteed vegetables that strike your fancy, that’s the beauty of it. The cream can also be substituted for yogurt or half and half.
